I love to cook. I wouldn't even say love. I would say I am obsessed. My obsession with cooking began first with my love of food. As a child I grew up with a family of amazing cooks. Any social gathering always involved food. I plan to share my creations as well as some secret family recipes on this blog. Cucumber Dill Salad
Looking for a refreshing side for your cook out. This one is light and simple. Hope you like it!
2 English cucumbers (thinly sliced or shredded, your choice)
1 small red onion (diced)
1 1/2 tablespoons salt
1 tablespoon plus 1 teaspoon white wine vinegar
1 teaspoon sugar
2 teaspoons dried dill or 2 tablespoons fresh
Directions
In a colander, toss the cucumber and onion with the salt and let it sit and drain for 20 minutes. Press the liquid out of the vegetables and rinse well with cold water.
In a medium bowl combine the vinegar and sugar and stir well. Add the cucumber mixture and toss to coat. Stir in the dill.
